Postpone and adjust Payment or just take payment information for processing later

i wondering if possible little manual adjustment.

products sold based on amount sold in bulk many people.

in other words, people may purchase 1 item, idea co-operative, many people group buy 1 product, , there discount based on number of people.

so unfortunately until know number of orders, wont know price.

can ecommerce cater -

(in order)

taking buyers information, including credit card

(in 2 weeks time)

we adjust price.

we process buyers information.
